It might take more coats but I think you can seal it off properly. I don't see why not, anyway. Anyone have any direct experience with this?

I don't recommend particle based boards in any sense. For one, it is almost impossible to seal 100%, and the conditions we expose them to in animal enclosures (high heat and humidity) causes their rapid deterioration. Second, the glue used to bond the particles off-gases formaldehyde, which can be a health hazard for organisms kept in an enclosed space. The smaller the particle, the more glue is used, the more formaldehyde is off-gassed. OSB is very fine sawdust, so a LOT of formaldehyde.
